Why does Colorado Brewery List include a Sake brewery? Advanced Cicerone Dev Adams, aka Miss Lupulin, has this to say…
“while many people call sake rice wine and the Colorado Revised Statutes define sake as a vinous liquor, sake is a form of beer as it is made from grain, not fruit.
Sake is a beer brewed from rice, water, koji, and yeast. Even the process of making sake has more in common with beer than with wine – but is also extremely unique due to the inclusion of koji (which is a fungus).
If you’re interested in learning more about sake, I highly recommend checking out the film The Birth of Sake; it’s beautifully made and provides insight into how sake is traditionally brewed. Then, make your way down to the Colorado Sake Co and find out about modern sake brewing methods.
